Easter Cupcakes


Easter is one of my favorite holidays because it brings my whole family together! This April I decided to make some easter-themed cupcakes. You can really make this with any type of cupcake. I chose carrot cake because they are my dad's favorite. I used Ina Garten's Carrot Cake Cupcake recipe including the cream cheese frosting recipe that's attached. I found that baking them at 350 for 30-40 minutes worked better than her method.
 I added a hint of green food coloring to make it a pastel color. I made the nest out of toasted coconut and added some jelly bean "eggs"! It made a cute and delicious dessert that the whole family could enjoy.

Toasted Coconut

1. Heat oven to 350 degrees
2. Spread sweetened coconut on a baking sheet covered in parchment paper
3. Cook for 5-10 minutes, stirring occasionally to get evenly browned.

Super easy!
