Giada's Lemon Spaghetti

Ciao from Roma! I've spent the past month studying abroad in Rome. I would've posted more but we have lots of issues with internet. One of the main reasons I chose Italy was because of my love of Italian food. It is one of my favorite foods to cook and eat and I knew that I would get a lot of out of living here for an extended period of time. I am living in a four person apartment with a closet kitchen (I will post photos later). We have a mini-fridge, sink, and stove-top. So far I've really missed baking, but I've had a great time perfecting my pasta. Some days here have been very hot and one day I came back starving, but wanting a light meal so I decided to make Giada's Lemon Spaghetti. The ingredients are simple: pasta, olive oil, parmesan, lemon juice and zest, salt and pepper, and basil. After spending a few weeks here these were ingredients that were always in my kitchen. The lemons here are huge so I ended up adding a bit more than the recipe called for. I also added some breaded chicken to get a little bit of protein. It's a great summer pasta and something I've had several times since I've been here!
