Almond Butterscotch Bars

We've had some fall weather here the past few days and I've been craving "fall things" such as pumpkin, apple cinnamon, and butterscotch. I had a sweet  tooth last night so I decided to make some almond butterscotch bars that are my cousin Ryan's favorite!

1 c butter
3/4 c packed brown sugar
1 t vanilla extract
1/2 t almond extract
1/2 t salt
2 c flour
1 c butterscotch chips
1/2 c blanched/slivered almonds

1. Turn the oven to 350. Line a baking sheet with parchment paper.
2. Cream butter and sugar together.
3. Beat in extracts and salt.
4. Gradually stir in flour until well blended. If a little dry, use your hands to roll it into a ball.
5. Roll out the ball of dough onto the parchment paper. You can try to use a floured rolling pin but its usually easiest to use your fingers. It probably wont fill the entire sheet.
6. Sprinkles butterscotch and almond over cookie dough and press lightly.
7. Cook for 18-24 minutes. Cool on wire rack and cut into squares for serving.

From my roommates boyfriend: "I've probably had things that have tasted better than this before, but I don't remember when."
