Family Dinner: Kreegs Gnocchi!

For my second installation of family dinner, my roommate Lauren made homemade gnocchi. It's actually super simple and uses only a few ingredients.
 Gnocchi Ingredients: 
16oz container of ricotta cheese
1 egg
1 tsp olive oil
2 c flour
3/4 tsp salt
1/2 tsp pepper
1. Whisk together cheese, egg, olive oil, salt, and pepper. Start boiling water in a large pot. 
2. Start adding flour 1/2 c of flour, kneading after each until dough is not longer sticky.
3. Take the mixture out of the bowl and knead on floured surface. Then divide the dough into 6 pieces.
4. Roll out each of the six pieces into a long rope and cut into 1 in thick pieces.

5. Press each piece with a fork to give it a ridged texture. 
6. Add the gnocchi pieces into the boiling water. Boil until they all float to the top and then let boil for 30 seconds to a minute. Drain in colander.
7. Heat up a skillet. Add a tablespoon of butter to the pan. Then add the gnocchi pieces until they are slightly browned and a little crispy.
8. Serve with whatever sauce you want! (I recommend the pesto.....)
Pesto Ingredients: (from Ina Garten)
1/4 c walnuts
1/4 c pine nuts
1 clove of garlic, minced
5c of fresh basil leaves
1 t kosher salt
1 t pepper
1 1/2 c olive oil
1 c grated Parmesan
1. In a food processor (or blender, as we used), process the walnuts, pine nuts, and garlic.
2. After 20 seconds add the basil leaves, salt, and pepper. 
3. Slowly add the olive oil until it is pureed. 
4. Add the parmesan and then process for at least a minute. 
Serve immediately!
