(Healthy) Mac & Cheese

So if you have been following my blog you've probably noticed that I haven't been posting as much as usual. I've had midterms the past two weeks and therefore I have been eating out a lot or making super simple boring meals. Earlier on Pinterest I saw a recipe for "Confetti Mac and Cheese" or Mac and Cheese with veggies. I wanted something warm, but healthy so I took a box of Annie's Homegrown Mac and Cheese and got started.

Boxed Mac and Cheese
Olive Oil or Butter

1. While cooking pasta according to box directions, put 2 T of olive oil or butter (your preference, I use olive oil because it's healthier) and sauté veggies until they are bright in color and softened.
2. After you finish the pasta and add the cheese sauce, mix in vegetables!

It's that easy! 
To add a bit more flavor I also added some garlic salt, pepper, and red pepper flakes!
