Turkey Meatballs


Going with the theme of fast, easy, and healthy, I have created a recipe for turkey meatballs inspired by Martha Stewart. They can be frozen and kept for up to three months. It's easy to create a few sandwich bags full of them to keep in the freezer and to take a few out at a time.  Here's my recipe:
Turkey Meatballs
1 lb ground turkey
¼ c skim milk
½ c Italian bread crumbs
1T parmesan
1/3 c white onion
2 small chopped cloves of garlic
1t Italian seasoning (oregano, rosemary, basil)
salt and pepper
Directions:
1. Combine all ingredients in a medium size bowl and mix with a spoon (or your hands) until well combined.
2. Place the meat mixture in 2 T balls on a small baking sheet. Make sure it fits in your freezer before you load it!
3. Freeze meatballs for at least an hour. Note: If you are planning on cooking them afterward, they still need to be frozen to maintain their shape. 
4. After they are frozen, place them into ziploc bags!

Directions for Cooking:
1. Heat up skillet with olive oil. Place meatballs in hot oil and cook for 7-8 minutes until brown and warmed through. 
2. Add to your favorite pasta dish or eat with marinara sauce!
