Creamy Cajun Pasta

Creamy Cajun Pasta recipe
The other day I was looking at recipes online and I found a very highly rated delicious dish from Food.com that I just had to share. My boyfriend loves cajun food and I obviously love pasta so this dish was a perfect combination! It definitely has a kick, but the cream sauce lightens it. We had a small dinner party so we served it with bread, cheese, and a side of steamed lemon broccoli!
Ingredients:
4 boneless skinless chicken breasts
16 oz spaghetti
2 T butter
4 thinly sliced green onions
1 1/3 c heavy whipping cream
3 T chopped sun-dried tomatoes
1/4 t salt
1 t black pepper
1 t garlic powder
1 t onion powder
1 t cayenne pepper
1 t paprika
1/2 t dried basil
1/2 c parmesan cheese
Directions:
1. In a medium bowl, combine the black pepper, garlic powder, onion powder, cayenne pepper and paprika to make a cajun seasoning. Cut the uncooked chicken breast into strips. Put the strips into the seasoning and stir to coat.
2. In large skillet, add the 2 T butter. Once the butter is melted, add the chicken strips and sauté over medium heat until they are tender.
3. Reduce the heat and add the sun-dried tomatoes, green onions, heavy cream, salt, and dried basil. Keep the chicken sauce at a light simmer for 10 minutes or so to let it thicken.
4. After 10-15 minutes, add the parmesan cheese. Once it has melted into the sauce, add the cooked pasta and serve!
Serves 4-6
If you already have a cajun seasoning you can ignore the first part of the directions. It makes great leftovers!
