Eat Your Veggies

So one of my New Year's Resolutions this year was to eat all of my fruits and veggies at least three days a week. I tend to eat pretty healthy all ready and I'm happy with my weight but I thought it would be a great way to better fuel my body during the busy school week. According to the USDA, the daily serving of vegetables for women my age is 2 1/2 cups. (Click here for a chart that shows what equals a cup of vegetables.) This week is my first week back at school so I went to Trader Joe's, and bought a ton of veggies! I washed and cut them to make them easily accessible during the day.
Here is my veggie-full day:
8:30am Two scrambled eggs and with one cup of sliced mushroom and diced peppers. Sautéed in olive oil for better flavor and health benefits. 
I will admit that one cup was a lot of veggies for this dish. It made me very full but kept me satisfied during my three hours of class before lunch.

12:00 pm Sandwich with peanut butter, half a banana, honey, and cinnamon. 3/4 cup of baby carrots with healthy ranch dressing.
I found a ranch dressing recipe on Pinterest (follow me!) that consisted of two ingredients, and it was waaayyyy better than anything store bought! 
Ranch Dressing
16 oz. nonfat greek yogurt
 1/2 ranch dressing packet
Just mix the two together to create a creamy and tangy dip for veggies. Also great on sandwiches.

3:00 pm Snack of pomegranate greek yogurt. 
4:15pm Post workout protein shake (milk and protein powder)
6:30 pm Half of a grilled chicken breast (on my George Foreman) with a quinoa from The Near East and a cup of steamed broccoli with lemon. 
7:30 pm For something sweet I had a kiwi.......and some chocolate. No one's perfect. 

I hope that all of you are sticking with your resolutions. I'll be posting many tasty vegetable dishes in the next few weeks. Remember: Food is Fuel!
