Greek Quinoa Salad

Greek Quinoa Salad recipe

I'm going to warn you.....after you eat this salad, you will be addicted. I first tried this salad at Whole Foods and I've been obsessed ever since. The salad just tastes so refreshing and healthy. I've made a big batch for this week and plan on snacking on it for the next few days. It goes great with grilled fish or chicken!

Ingredients:
1 c dry quinoa
2 c water
1/4 c cucumber
1/4 c chopped kalamata olives
4 diced green onions
1/4 c chopped red onion
1 c chopped cherry tomatoes
2 T chopped dill
2 T lemon juice
1 t pepper
1 t kosher salt
3 T red wine vinegar
3 T olive oil
1 clove minced garlic
1/4 c feta cheese 
Directions:
1. In a saucepan, combine quinoa and water. Bring to a boil and then let simmer with the lid on for 15 minutes.
2. While the quinoa is cooking chop all your veggies. Combine the cucumber, kalamata olives, green onion, red onion, cherry tomatoes in a bowl. 
3. When the quinoa is almost finished, combine the dill, lemon juice, salt and pepper, and garlic with the veggies. 
4. Once the quinoa is finished, pour it into the bowl. Stir to combine with all of the veggies and herbs. After it is combined, add the red wine vinegar, olive oil, and feta cheese. Store in the fridge!

It may seem like a lot of ingredients but it is a simple recipe and will last you for days. If you've never had quinoa, this is a great starter recipe!
