Bananas Foster Pancakes

Bananas Foster Pancakes
I'm not usually up to see the sunrise, but insomnia happens to the best of us. It's at these times that I usually have some weird inspiration (and I get hungry once I've laid in bed for an hour) so once I saw on all my social networks that it was Pancake Day and Mardi Gras I decided to make a breakfast worthy of both celebrations. It's a little bit of a sugar rush but a delicious way to celebrate both indulgent occasions.
Ingredients: (Serves 2)
Your favorite pancake mix (I used Aunt Jemima's)
1 1/2 T butter
1/2 c brown sugar
1 t vanilla
1/2 t cinnamon
1 banana sliced 
1 pinch of salt

Directions:
1. Mix together your pancake mix according to box directions. (I usually add 1 t vanilla and 1 t of cinnamon.)
2. Heat up griddle. In a medium saucepan over medium heat melt the butter.
3. Once butter is melted, add brown sugar. 
4. Once you add the brown sugar start cooking your pancakes!
5. When the brown sugar is mixed with the butter, add the bananas, cinnamon, vanilla and salt.
6. Keep stirring the foster mixture while you flip the pancakes. After the bananas have softened, turned the heat on low and let it bubble slightly while you finish the pancakes.
7. Top pancakes with bananas foster and enjoy!
If you are going to make a big batch of pancakes, I would wait until you are almost done to start the bananas foster or else the bananas get too soft.
