Fruit Pizza


Fruit pizza

So last night I hosted a girls night at my apartment and with some fruity drinks I decided to serve a fruity snack. I really wasn't planning on putting this on my blog because I've seen so many versions of it online, but after getting so many likes on my Instagram account, (@keightyeight), I decided that I would. It's a simple, beautiful, and delicious dish that is easy to whip up when you have people coming over.
Ingredients:
refrigerated sugar cookie dough 
1 block of cream cheese (softened at room temperature)
1/3 c sugar
1 t vanilla extract
assortment of sliced fruit (bonus points if you use what's in season)

Directions:
1. Preheat oven to 350 degrees. Roll out refrigerated dough on to a greased pizza pan. If you don't have a pizza pan, you can always use a baking sheet. 
2. Cook sugar cookie dough for 15-18 minutes until edges are lightly browned. 
3. Once cooled, mix cream cheese, sugar, and vanilla extract in a bowl. If the cream cheese is softened you will only need a spoon.
4. Spread cream cheese mixture on cookie dough evenly. Lay sliced fruit in any design you want! Get creative!

Thats it! Super delicious and maybe slightly nutritious? Either way its fun to serve, especially to kids!
