Homemade Pomodoro Sauce


Homemade Pomodoro Sauce
I always have a few things in my cabinet that I can whip up for an easy meal when I'm on the go. Today I decided to make a fresh tomato sauce that was inspired by Jamie Oliver. It only has a few ingredients and cooks in the same amount of time as the pasta. If you uses the full can of tomatoes you can serve 3-4 people but I usually use half at a time for just me. It's about as authentic as I can make at home and it takes 10 minutes.
Ingredients:
1 14oz can of diced tomatoes (I use fire roasted for flavor!)
1 clove of minced garlic
crushed red pepper
small bunch of fresh basil
olive oil
sea salt and pepper
spaghetti (whole wheat!)
sprinkle of parmesan cheese
Directions:
1. Boil water and start to cook spaghetti.
2. Put about 2 T of olive oil in a small saucepan. Add garlic and red pepper to taste. I like it spicy so I do 1-1.5 t. Cook until you can smell the garlic.
3. Chop basil. Add the diced tomatoes and 3/4 of the basil. Stir to combine ingredients. 
4. Turn up the heat on high for one minute and stir constantly. Turn down heat afterward and add salt and pepper to taste (about 1 t each). 
5. Strain pasta and put in bowl. Add the tomato sauce, parmesan cheese, and rest of the basil. 

This makes a beautiful pasta dish! I just add to add a picture of the sauce :)
