Leprechaun Brownies

leprechaun brownies on katy's kitchen
I must admit, I took several different photos of this brownie. I was trying to get it to look as delectable and delicious as possible. I was trying to make it look perfect and cut it so that you could see all the layers, but then I realized I was wasting my time. These can be a little messy, and brownies are hard to get out of the pan sometimes. But it wasn't any less delicious because it wasn't perfect. I ended up choosing my original photo before I had messed around with it too much. Life can be messy, but its also pretty beautiful and great just how it is.

I make these brownies every St. Patrick's Day because they involve green mint liquor and chocolate. You can't argue with that. Let me know what you think:
Your favorite box of brownies (Ghiradelli is the best)
2 tbps creme de menthe
2 c confectioners sugar
stick of butter (softened)
6 oz. chocolate chips
6 tbsp butter
(I didn't say they were healthy)
1. Cook brownies according to directions. Let cool.
2. In a mixer, combine confectioners sugar, softened butter, and creme de menthe until its smooth. Frost over brownies.
3. Microwave 6 tbsp butter and 6 oz. chocolate. Start with thirty seconds and stir. Add another 10-15 and stir again. Once smooth, pour and spread over the minty frosting mixture.
4. Let harden. You can put them in the fridge for 20-30 to quicken the process.
Eat and Enjoy! Happy St. Patrick's Day!

Left: When frosting with the mint, it will probably start to take off the top layer of brownie. Right: It doesn't matter because you are covering it with more chocolate!
