Easy Pizza Sauce

Easy Pizza Sauce on Katy's Kitchen
This week has been INSANE! Meetings on projects on tests all week. At the end of my Friday I was looking for something satisfying, easy, and that involved vegetables (because I had missed a few during the week). I had some mini Boboli Pizzas and my boyfriend and I decided to make our pizzas. I didn't have any pasta sauces like I usually use so I decided to try out my own sauce using Hunt's Roasted Diced tomatoes. The sauce turned out delicious! It was easy, cheap, and as my boyfriend said "It makes the pizza!". Try it on your next pizza and let me know what you think! (Also notice my new mini food processor! Thanks Mom!)

Ingredients:
15 oz. can diced tomatoes (roasted gives great flavor)
about 2 T olive oil
1 glove minced garlic
2 t balsamic vinegar
2 t italian spices
1 t red pepper flakes
salt and pepper to taste

Directions:
1. Blend all ingredients in a food processor. 
2. SPREAD ON YOUR PIZZA! IT'S THAT EASY!

It should keep for a week or so in the fridge. You can also freeze it.
