Hummingbird Cake

To celebrate Spring (and hopefully nudge Winter along) I decided to make a Hummingbird Cake. I first heard about these cakes a few years ago from some foodie magazine that talked about these famous Southern cakes. After doing a little bit of research I found out that the recipe was first published in Southern Living in the 70's so I went straight for their recipe. I found a "lighter" version that uses less oil and frosting on their website. It's a rich spice cake with great texture and flavor. It has pineapple, banana, cinnamon, and pecans in it. I added some coconut to the frosting (but only on half because not everyone likes it). Below is a picture of the inside, though it looks kinda crumbly because it was the first piece I cut.
