Katy's Guacamole

I love Guacamole and after seeing it made table side at many Mexican restaurants I have come up with my own concoction. I think it tastes best with fresh Pico de Gallo, but if you are short on time you can always add your favorite salsa. Much like the michelada, guacamole is great in the summer and perfect for Cinco de Mayo!
Guacamole Ingredients:
3 avocados
juice of 1/2 lime
1/2 c Pico de Gallo
1 1/2 t chopped garlic
1 t olive oil
11/2 t minced Jalapeño (stemmed and seeded)
1 t kosher salt
1 orange slice


Directions:
1. Pit the avocados and scoop into a bowl. Mash the avocados until they are in big chunks but not too mushy. 
2. Add the lime juice, Pico de Gallo, garlic, olive oil, minced jalapeño, and salt and stir to mix evenly. 
3. Secret ingredient: add the juice of one orange slice! I saw a restaurant do this in Texas and it gives the guacamole a unique edge. My own little twist!

Pico de Gallo from Chevy's Fresh Mex Cookbook
Ingredients:
2 c tomatoes, diced
1/2 c diced white onions
2 t chopped cilantro
1 1/2 t minced jalapeño (stemmed and seeded)
2 t fresh squeezed lime juice
1/2 t salt
Directions:
 Combine all ingredients and mix well. Chill until ready to serve.
