Recipe Roundup: Summer Salads

It hurts a little bit not to have a kitchen this summer, but so far I'm loving my experience in Northern California and I wouldn't give it up. I decided to write this blog post as my first Recipe Roundup to offer some suggestions for great summer recipes already on my blog. Basically, these are the things I would be making if I had a kitchen. I decided to start with salads because I tend to eat a lot lighter in the summer and because everyone needs a little something healthy!

1. Greek Quinoa Salad
I've started eating quinoa within the past few months and I'm obsessed. If you're new to quinoa this a great first recipe to try it out with. It's healthy, light, and packs a ton of flavor.

2. Red, White, and Blueberry Salad
This is the perfect salad for July! I love using seasonally fresh fruit and spinach during the summer. This recipe also uses my favorite vinaigrette!

3. My Go-To Salad
This basic recipe gives you a guide to making a salad out of the leftovers in your fridge! Since I tend to grill a lot in the summer, I always keep the leftover meet for salads the next day. Again, I'm a big fan of adding something sweet and fruit is the best way to satisfy my sweet tooth.
