Pumpkin Chocolate Chip Muffins

I've been craving pumpkin all month. I bought a box of Trader Joe's Pumpkin bread and muffin mix to make satisfying my craving easy. All it takes is a box of the mix, some eggs, water, and oil and voila! A simple and delicious treat. Last year, I shared another Trader Joe's pumpkin muffin mix. With the streusel topping, that recipe was definitely aimed at breakfast. I decided to try this chocolate recipe out so that you could have something sweet for breakfast or a little dessert later in the day. 
The recipe is easy and delicious...perfect for the starving college student! The mix was only $2.99.

Easy box mix!

1 box Trader Joe's Pumpkin Muffin mix
1 c mini chocolate chips 

1. Set oven to 400 degrees. Line muffin pan with (festive) cupcake wrappers.
2. Make mix according to directions. Add in 1 c mini chocolate chips. Bake for 15-18 minutes.

That simple!

  •  Most Trader Joe's recipes list a baking time thats too long. They listed 20 minutes for the recipe and mine came out great at 15 minutes. I would check on them so they don't burn. 
  • The mix can also be made in a loaf pan.
  • The recipe makes about 18 muffins. 
  • I use mini chocolate chips because they are less likely to sink in the batter when baking, but you are free to use regular size!
