Spinach and Sausage Pasta

This meal is comfort food at its finest. Its creamy, meaty, and bursting with flavor. My roommates and I were staying in one night and I decided to create a delicious recipe that would go with our red wine plans. I had half of the ingredients from the Simple Italian Wedding Soup so it was meant to be! Make this meal when you're looking for something warm that feeds a crowd.

1 lbs of spicy italian sausage
2 T butter
1 c mushrooms
half of one large onion, chopped
1 c sour cream
3 c spinach
2 T fresh parsley*
1 T Italian spice mix
Half jar of your favorite tomato/marinara sauce
1 clove minced garlic
1/2 c grated parmesan 
half a box of hearty** pasta
salt and pepper to taste

1. In a large skillet, brown the sausage. Once finished, place on a paper towel and wipe out the pan. 
2. In the same skillet, melt the butter. Add in mushrooms and onions and cook until softened. 
3. In a large pot, add water and bring to a boil.
4. Add the spinach to the same skillet as the other veggies 1 c at a time, adding more as it begins to wilt. Once incorporated, turn to low-medium heat and add the garlic.
5. Add the pasta to the boiling water and cook according to directions.
6. To the veggie skillet-add the sausage back in as well as the parsley and italian spices. 3 minutes before the pasta is done, add in the tomato sauce, sour cream, and cheese. Season with salt and pepper to taste.
7. Once the pasta is done cooking, strain and then mix in with sauce. Serve with some chianti! 

*I happened to have fresh on hand, but this isn't necessary as long as you add in the Italian spices
**By hearty pasta I mean something like farfalle, orecchiette, penne, ect. Wimpy little spaghetti doesn't stand a chance against this meaty sauce.
