(Gluten-Free) Shrimp Scampi

Recently my younger sister has gone gluten-free for health reasons so I've decided to try a few different gluten-free recipes. She's a freshman living in the dorms at my university and there aren't a ton of (great) options when it comes to eating gluten-free. At least once a week she comes to my house where I have been experimenting. So far, gluten-free pasta has turned out pretty well. It cooks and tastes similar to regular pasta. We've eaten the Ancient Harvest Spaghetti a few times now and I really enjoy it! Here is one of the GF meals I've really liked. Serves 2.

Ingredients: 
6 oz. (gluten free)* spaghetti, cooked according to box directions
1/2 lb shelled and deveined shrimp
3 T olive oil
1 clove garlic, minced
1 t red pepper flakes
1/4 c white wine
1 T parsley (I used dried)
salt and pepper

Directions:
  1. In a sauté pan, heat the olive oil on medium heat. Add the garlic, red pepper flakes, and a dash of salt and cook until you can smell the garlic. 
  2. Once the garlic smells delicious, add the shrimp and white wine to the pan. Stir with a spatula to mix all the ingredients. Make sure the shrimp are spread out evenly so they can all cook.
  3. Increase the heat until the wine sauce beings to bubble. Turn the shrimp over to the other side. Let the wine mixture boil for 2 minutes before turning back down to medium.
  4. Finish cooking the shrimp until they are pink and plump. Remove from heat and add parsley.
  5. Mix in cooked pasta. It tastes delicious with fresh lemon juice and/or sprinkled with an Italian cheese blend. 

*The reason I'm writing (gluten free) is because this can easily be made with regular pasta.
