Recipes I Loved this Week

This week I tried out a lot of new recipes from some of my favorite chefs and bloggers. Here are my faves:

1. Lemon Blueberry Muffins from Gimme Some Oven
I'm pretty sure the only reason I bought blueberries and lemons at the grocery was to make something so delicious and summery that this cold weather would go away. It's still cold, but at least these muffins were great! One change I made was to use almond milk instead of regular. For the topping, I also used brown sugar instead of "raw."

2. My Greek Quinoa Salad 
This gluten-free salad happens to be one of my favorites and I made it recently for my sister and I. It's great as a side dish or main dish!

3. Crock Pot Sesame Honey Chicken from SkinnyTaste 
My roommates and I made this earlier this week. Very tasty! The only issue I had with it was that we used regular soy sauce (because thats what we had) and it was a little too salty for me. If we had used the recommend reduced-sodium it would have been even better.

4. Crispy Mustard-Roasted Chicken from Ina Garten
This dish tasted awesome, was boyfriend approved, and very simple to make. I halved the recipe and instead of using a whole chicken, I used two bone-less, skinless chicken breasts. I dipped both sides in the panko topping and used dried thyme instead of fresh. For a side, I steamed broccoli and topped it with lemon. We enjoyed it with Markham's 2011 Chardonnay, a gift from Matt's mom! I will definitely be making this again.
