Yogurt Apple Salad
In the past I've talked about the workout group I'm in called CHAARG (Challenging Healthy Attitudes + Actions to Recreate Girls). We have large group workouts each week that consist of trying out new fitness activities (like Spinning and Boot Camp) as well as small group exercises each week. This semester we are also doing some bonding activities. Tonight we had a potluck and I knew just what to bring. A few weeks ago, my boyfriend and I were visiting his grandparents and his grandma made us this delicious salad. It's perfect for brunch or as a sweet side dish. Since we are a workout group, I thought this was also great to bring since it is pretty healthy.
Ingredients:
1 c cubed red apple (about 1 apple depending on size)
2 c cubed golden/green apple (1.5-2 apples)
1/2 c raisins
1/3 c thinly sliced celery
2 T orange or apple juice
8 oz. vanilla yogurt
1/4 t cinnamon
Optional: 1 T chopped nuts or a sprinkle of granola
Directions:
  1. After you've cubed the apples, mix them together in whatever bowl you plan on serving them in. Add raisins and sliced celery.
  2. Add 2 T of juice to the bowl and use a spoon to toss.
  3. Measure out 8 oz of vanilla yogurt and mix in 1/4 t cinnamon. Add the mixture to the bowl. 
  4. Add any nuts or granola, toss and serve!

  1. Thanks, Katie. I am going to make this with golden raisins and a bit of dried cranberries. I think orange/apple juice is better than lemon juice which is lusted in other similar recipes. Good idea about the optional nuts. Some crushed walnuts might be nice. I am guessing regular yogurt is preferable to greek as it is sweeter and thinner for coating. Am I right?
