Simple Frittata

Meal planning can be a frustrating and annoying process. This may be in part because I leave it until Sunday night, but I'm willing to bet it's also because I'm cooking for one person. I usually end up halfing the recipes, but sometimes I still end up with too much food. One thing I've found that helps is keeping some stable items in the fridge that have many uses. Some of these include red pepper, onion, Parmesan cheese, and eggs. When faced with these ingredients (and extra bacon from my quesadillas) I decided to make a quick frittata that I could have for breakfast and lunch on the go.

6 eggs
4 slices of bacon, cooked
1/2 red pepper, diced
1/4 c onion, diced
Olive oil 
1/8 c of grated Parmesan cheese 
Salt and pepper

1. Preheat oven to 450 degrees. Heat an oven safe skillet over medium heat. Add in 1-2 T of olive oil.
2. Add red pepper and onion to the pan and sauté for 3-5 min. In a bowl, mix together 6 eggs, 1/8 c cheese, and a few dashes of salt and pepper.
3. Crumble bacon and add to the pan. Spread veggies and bacon evenly across pan. Add cheese and egg mixture. Continue to cook until edges begin to set (less than a minute). 
4. Stick skillet in oven and cook for 8-12 minutes until the egg has set and no. Remove for pan, slice, and serve.
