Marinade Meals: Rosemary Chardonnay Chicken

Let's talk about chicken friends! It has been a staple of meals lately and not just because I bought the 10lbs bag from Costco. Actually, since I started cooking for myself, chicken has been a pretty regular feature on my menu because its so easy to cook and a lean protein source. 

I was having a conversation with a friend at work who talked about how basic baked chicken is. I've also talked to my boyfriend Matt who makes chicken with just a little bit of salt and pepper. I used to be that person, until I discovered how just a few ingredients can make a HUGE difference in chicken. It doesn't need to be bland, it will take on whatever flavors you surround out with. 

My favorite way to make juicy, flavorful chicken is to let it sit in a marinade for a few hours before cooking it. I make marinades out of pretty much anything I have in my fridge so I've decided I'm going to start sharing these. No more boring chicken people! 

My first marinade is one I made last weekend. It made enough for 2 chicken breasts. 

1/2 c olive oil
1/3 c Chardonnay 
1 spring of rosemary
juice of half of a lemon
1 sliced clove of garlic
1/2 T dried oregano
1 t of salt 
1 t of pepper

I let the chicken sit for 4 hours or so. Then I heated up the oven to 400 and baked the chicken for 25-30 minutes. Simple as that. 

Kick your chicken up a notch and be on the lookout for more marinade recipes!
