Everything But the Kitchen Sink Pasta Sauce + Whole30 Day 3

Besides the people at work, Danielle is the first person I became friends with out here. We have a scary amount in two much to consider our friendship just a coincidence. One thing we both love to do is cook. She's not doing the Whole30 with me, but she loves good fresh food so she was down to make a healthy meal with me. We ended up with a meat sauce with every vegetable we could find and some yummy zucchini noodles. It's super easy to make and the leftovers are fabulous. 

1 lbs ground beef
1  clove of garlic, minced
olive oil
1/2 onion, diced
1/2 c sliced mushroom
Other vegetables: Add whatever you have! We did peas and cauliflower. Others that would be good include peppers, carrots, celery...pretty much anything you have on hand.

1. Brown ground beef in a pan. In a separate skillet, heat a tablespoon of olive oil. Add in onion (and any other longer cooking vegetable). Stir, cooking until the vegetables are soft. Add in vegetables that take less time to cook as it goes on.
2. Once the meat is browned, add in a jar of pasta sauce. Let simmer for 5-10 minutes before adding the cooked vegetables. From there, continue to simmer for 10 minutes while you cook the zoodles. Serve! 
Day 3

7:00 am
4 turkey rolls
2 eggs scrambled with spinach and mushrooms
Handful of cashews, almonds and pistachios for healthy fat 

Handful of cherries

4:15pm Coconut cocoa rxbar to hold me over until dinner 

7:15pm  Kombucha 

8:00 pm
Zoodles with meat sauce and roasted cauliflower 
Cherries and blueberries 

The biggest thing I noticed today is that I felt tired. And I got 7 1/2 hours of sleep! I've read that it takes time for your body to get used to getting energy from vegetables and protein again since its used to get simple energy from sugar and grains.
