How to Cook Flank Steak + Whole30 Day 13

I don't have a grill in my apartment, but I have found a super simple easy way to enjoy flank steak at home. 

Marinade (I used olive oil, rosemary, salt, pepper and garlic)
1 lb Flank steak, cut in pieces

  1. Marinate flank steak for at least an hour.
  2. After the hour, heat a cast iron skillet at medium high heat. 
  3. Place a cut of flank steak on the pan. Cook for 4 minutes on each side. I also used a meat thermometer to make sure the thickest part of the meat got to 125-130 degrees.

7:45 am Last of the egg and mashed potato cups topped with kimchi, 3 turkey rolls and olives
11:45am Epic bar
1:30am Romaine salad with grilled chicken and balsamic vinaigrette 
6:00pm Flank steak with balsamic glazed sweet potatoes and brussel sprouts 

Today I worked the first half of the day before coming home for some time on the driving range with Matt. We made a good meal together! Similar to yesterday, there were a few times where my stomach didn't feel great (for seemingly no reason).

Dinner however was fabulous. We paired it with a glass of red wine and had organic strawberries and a peach for dessert. I'm glad we are reaching the halfway point. I think the way I look at food is definitely changing. Everything is in season so everything tastes pretty delicious and I look forward to these meals. The hardest part is meal planning and cooking things ahead. I like the weekends because I have a little more time to actually do that.
