Curried Cauliflower + Whole30 Day 29

So to me, cauliflower has always been that super lame friend that was always trying to hang out with all the vegetables, but never had the personality to be popular. Since being on Whole30, I've learned that while it may not have a ton of personality, its totally versatile and can hang out with everything. I made cauliflower rice and roasted in many ways, but I've found a favorite. This recipe is a mashup of Nom Nom Paleo + Shauna Niequist so obviously its awesome.

Ingredients
1 head of cauliflower
3 T olive oil
2 T curry
1 T cumin
2 t cayenne pepper
juice of half of a lemon
salt and pepper
Optional: chopped nuts and raisins

Directions
1. Preheat oven to 450 degrees. Cut up head of cauliflower into bite sized pieces. Toss in a bowl with olive oil, curry, cumin and cayenne pepper. Spread out cauliflower onto a baking sheet covered with foil. Sprinkle with salt. Cover baking pan with foil and stick in oven for 15 minutes.
2. After 15 minutes, remove foil from pan and stick back in the oven to be roasted for 20 minutes. Stir every 8-10 minutes or so. If you're adding raisins and nuts, add those in the last time you stir. 
3. Once removed from oven, sprinkle with lemon and serve.

Today was a good day. I've had a lot of dreaming about post-Whole30 meals, but overall I've felt very focused and energized. I'm interested to see if that continues once I start re-introducing foods.
