Tomato Cheese Toast

I don't have the best commute so if I work late I usually get home late and the last thing I want to do is make dinner. Recently, I was home just early enough to catch my local farmers market and was able to pick up a big scrumptious heirloom tomato for $1. I had recently seen this recipe for a cheesy toast and decided to make it a meal.

I've seen my mom eat cheesy tomato toast and she recently told me that she got that from her mom who used to eat it as a "diet" meal. I don't know if cheesy bread would count as a diet recipe by today's standards, but I'm willing to go out of my way to eat in the same tradition of my grandma. I truly believe that food is sacred and can connect us to our roots, even if it isn't the best food nutritionally. I ate this meal and it was delicious.
Anyways, if you want to make this Whole30 just eat the tomato and cry about doing a Whole30.

Crusty sourdough bread
1 1/2 c Irish cheddar cheese
1 T dijon mustard
1 t mayonnaise
1 t Worsteshire sauce 
1 egg yolk
1/2 t onion powder
1/2 t garlic powder
1 heirloom tomato, sliced 
Black pepper 

  1. Preheat oven on broil. Slice bread into 1 in pieces and slather with butter. Place in oven until crisp.
  2. Mix together cheese, mustard, mayo, worsteshire, egg yolk, onion and garlic powder in a bowl. 
  3. Place slice of heirloom tomato over the bread so that its covered.
  4. Mold cheese mixture over tomatoes and bread. Place on a baking sheet and cook until puffy and brown (about 3-5 minutes). 
  5. Crack black pepper over and serve. Great with soup or a salad.
